Shangri-La Eros New Delhi, in collaboration with Chef Pin, presents an exclusive Magadh cuisine showcase at Tamra, the hotel’s award-winning international cuisine restaurant, from 11 to 13 February 2026, led by Home Chef Chef Sushma Kumar. This three-day culinary experience celebrates the enduring traditions of Bihari cooking, bringing regional flavours, rarely represented in fine dining settings, into the spotlight.
Chef Sushma Kumar’s journey with food began in her grandmother’s kitchen, where the aromas of Litti Chokha and Champaran Mutton shaped her early understanding of cooking as a means of preserving culture and tradition. Over the years, she has devoted herself to reviving Bihar’s fading culinary heritage, reintroducing lost recipes, festive preparations, and slow-cooked village dishes that reflect the region’s earthy, robust flavours.
The showcase is spread across three thoughtfully curated menus, each offering a distinct expression of Magadh and greater Bihari cuisine. Guests can begin with vegetarian starters such as Jharkhand Dhuska with Kala Chana Ghugni, Bihari Singhara, and Choliya Bhabra, alongside non-vegetarian preparations including Chicken Bihari Kabab, Madhubani Fish Fry, Lahsuni Murg Tikka, and Bihari Mutton Kabab.
Main course selections highlight the region’s signature techniques and spice profiles, with vegetarian dishes like Magadhi Paneer, Kathal ka Korma, Champaran Kathal, Matar Makhana, and Mushroom Shukha, complemented by robust non-vegetarian offerings such as Champaran Mutton, Bihari Chicken Korma, Muzaffarpur Murg Salan, Bhuna Gosht Masala, and Bihari Fish Curry.
Accompaniments pay homage to everyday staples and festive favourites, featuring Bhojpuri Sattu Litti with Baingan Aalu Chokha, Mutton and Chicken Litti, Dal Puri, Sattu ki Kachori, Matar ki Kachori, Kesari Pulao, and Ghee Rice. Desserts bring the experience to a comforting close with traditional sweets such as Mal Pua, Makhane ki Kheer, Dudh Pitha, Thekua, and Mal Pua with Rabdi.
Through this showcase, Tamra offers guests an opportunity to engage with Bihar’s food culture in its most authentic form, honouring a cuisine that has travelled far beyond its origins while remaining deeply rooted in home kitchens.
The Magadh cuisine experience is available for Lunch and Dinner. The Lunch Dinner Buffet is priced at INR 3,800 plus taxes per person and the Dinner Buffet is priced at INR 4,000 plus taxes per person.
